We hope you've enjoyed the challenge as much as we have and that you've developed some healthy habits you can use all year long.

Smoothie of the Day: Green Glow Smoothie

Green Glow Smoothie

  • 1 SmoothieBox Green Smoothie Mix
  • 2 Scoops of SmoothieBox collagen (optional)
  • 1 cup plain coconut water 
  • 1 banana
  • 1 cup mango
  • 1 cup pineapple
  • 1 cup spinach or kale
  • 1 tablespoon flax seed

    Congratulations! You've made it to the last day of our workouts! You've rocked this week's workouts, so today Carrie will be guiding us through a slower-paced, mindful yoga recovery exercise. Let's finish strong!

     

    Lunch: Leftover Slow Cooker Chicken Stew

    Recipe by The Clean Eating Couple

    Ingredients:

    • .5 lbs boneless chicken breasts cut in cubes
    • 1 cup onion chopped finely
    • 1 cup russet potatoes cut in ½ inch pieces
    • 1 1/2 cups carrots chopped finely
    • 1 1/2 cups celery chopped finely
    • 15 oz can tomato puree
    • 1 tablespoon tomato paste
    • 1/2 teaspoon each: salt, pepper
    • 1 teaspoon fresh rosemary chopped
    • ½ teaspoon garlic powder
    • 2 cups chicken broth low or no salt
    • 1 cup frozen peas -reserve until ready to eat

      Directions:

      1. Chop all veggies + raw chicken into cubes. In slow cooker insert, stir all ingredients together except peas.
      2. Cook on low for 6 hours. When ready to serve, stir in peas until defrosted.

         

        Dinner: Pesto Chicken Zoodles

        Ingredients:

        • 2 tablespoons olive oil
        • 1 lb boneless, skinless chicken breasts
        • 1 tablespoon minced garlic
        • 1 lb cherry tomatoes halved
        • 1/4 teaspoon pepper
        • 1/4 teaspoon salt
        • ¼ cup fresh basil finely chopped
        • 1/2 cup Trader Joe’s Kale Cashew Basil Pesto or homemade
        • 2 large zucchini spiralized with water squeezed out – about 4 cup

          Directions:

          1. In a pan, heat olive oil. Add in chicken + sauté until brown on edges, approximately 15 minutes.
          2.  Once chicken is cooked, add in spices, olives, sun-dried tomatoes + artichoke hearts. Stir to combine + cook for an additional 2-3 minutes.
          3. When ready to eat, add in lemon juice and spiralized zucchini. Toss with the rest of the ingredients and cook until noodles start to soften, approximately 2-3 minutes.
