7 Day Healthy Habits Challenge : Day 5

Welcome to Day 5!

We've talked a bit about the superfoods found in our smoothies, but one superfood we haven't talked about yet is cacao. Cacao is one of the highest sources of magnesium found in nature and also is packed with antioxidants. Our Chocolate Smoothie Mix is packed with ingredients filled with natural vitamins and minerals to boost your energy and be beneficial to gut health. 

Our recipe of the day is our Fiber Boost Smoothie recipe made with our members' favorite Chocolate Smoothie mix. This recipe doubles up on the cacao and includes a few other superfoods to give you the best start to your day.

 

Smoothie of the Day: Cacao Fiber Smoothie

Cacao Fiber Smoothie

  • 1 SmoothieBox Chocolate Smoothie mix
  • 1 cup nut milk of choice
  • 1 tablespoon flax seed
  • 2 tablespoons cacao nibs
  • 1 tablespoon nut butter
  • 1/2 tablespoon shredded coconut for topping (optional)

    Lunch: Leftover Lemon Salmon

    Lemon Salmon with green beans

    Ingredients:

    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice -juice of one lemon
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon dried parsley
    • 1/2 teaspoon paprika
    • 1/4 teaspoon salt
    • 1/2 teaspoon pepper
    • 1 lb salmon filet
    • 2 cups baby potatoes
    • 2 cups green beans

      Directions:

      1. Preheat the oven to 425 degrees.
      2. Cut the baby potatoes in half. Microwave potatoes for 2-3 minutes, until fork tender.
      3. While potatoes heat, in a small bowl mix together olive oil, lemon, and spices.
      4. Line a baking sheet with foil. Lay salmon filet in the middle of the sheet. Add green beans and potatoes to the baking sheet.
      5. Drizzle the olive oil/spice mixture over the top of the salmon, green beans and potatoes. You can toss the potatoes/green beans so they are evenly coated.
      6. Bake at 425 for 15 minutes, then broil for 3-5 minutes until the salmon is lightly browned.

         

        Dinner: Turkey Stir Fry

        Turkey Stir Fry

        Ingredients:

        • 1 tablespoon olive oil
        • 1 tablespoon garlic minced
        • 1 cup onions minced
        • 1 lb turkey
        • 1 lb green beans halved
        • ¼ cup coconut aminos
        • ½ tablespoon Trader Joe’s bomba sauce

          Directions:

          1. Heat olive oil in a pan. Add onion + garlic and sauté for 5 minutes until translucent.
          2. Add turkey to cooked onion and garlic. Cook uncovered until browned, about 10 minutes.
          3. After turkey is cooked, add in green beans, coconut aminos + bomba sauce.
          4. Stir together. Cover + cook for 5 minutes so green beans can ‘steam’. You can cook for an additional 5 minutes if you prefer softer green beans.
          5. Serve with green onions or sesame seeds for garnish over rice or cauliflower rice
