  • 1 SmoothieBox Berry Smoothie Mix
  • 1 cup almond milk
  • 1/2 cup frozen raspberries
  • 1 tablespoon chia seeds
  • 1 orange, peeled

     

    Workout of the Day: Low Impact Workout

    Low Impact Workout

    Today, we're going to join fitness instructor Carrie Groff for a low-impact workout. This workout is perfect for those with knee or other joint issues that still want to get a workout in and stay active


    Lunch: Leftover Stuffed Peppers

    Recipe by The Clean Eating Couple

    Ingredients:

    • 1 tbsp olive oil
    • 6 large bell peppers
    • 1 lb ground beef
    • 1/2 cup onions, pulsed in food processor
    • 2 cloves garlic, pulsed in food processor
    • 1 cup carrots, pulsed in food processor
    • 1 cup cauliflower rice
    • 2 cups tomato sauce (leave 6 tablespoons off to the side!)
    • 1 teaspoon dried basil
    • 1 teaspoon dried parsley
    • 1 tsp pepper, 1/2 tsp salt, 1/4 cup water

      Directions:

      1. Preheat oven to 375. In a large pan, heat olive oil. Sauté beef for 10 minutes until browned.
      2. While the beef is cooking, slice the tops of the peppers off + remove the seeds.
      3. Pulse carrots, onions, garlic, basil & parsley in the food processor until finely chopped. Stir in chopped veggie mixture with beef.
      4. Sauté until veggies are soft. When everything is cooked, turn off the heat + stir in raw cauliflower rice, tomato sauce + spices. Stuff the peppers with the mixture and top each pepper with remaining tablespoon of tomato sauce. You can use a spoon or your hands to fill the peppers + press the mixture down to fit all of it inside.
      5. Add peppers to crockpot and 1/4 cup water in the base. Cook the peppers on low for 4- 6 hours.

         

        Dinner: Lemon Salmon

        Lemon salmon with green beans and potatoes

        Ingredients:

        • 2 tablespoons olive oil
        • 1 tablespoon lemon juice -juice of one lemon
        • 1/2 teaspoon garlic powder
        • 1/2 teaspoon dried oregano
        • 1/2 teaspoon dried parsley
        • 1/2 teaspoon paprika
        • 1/4 teaspoon salt
        • 1/2 teaspoon pepper
        • 1 lb salmon filet
        • 2 cups baby potatoes
        • 2 cups green beans

          Directions:

          1. Preheat the oven to 425 degrees.
          2. Cut the baby potatoes in half. Microwave potatoes for 2-3 minutes, until fork tender.
          3. While potatoes heat, in a small bowl mix together olive oil, lemon, and spices.
          4. Line a baking sheet with foil. Lay salmon filet in the middle of the sheet. Add green beans and potatoes to the baking sheet.
          5. Drizzle the olive oil/spice mixture over the top of the salmon, green beans and potatoes. You can toss the potatoes/green beans so they are evenly coated.
          6. Bake at 425 for 15 minutes, then broil for 3-5 minutes until the salmon is lightly browned.
